HARVEST Manual harvest in the second half of September first week of October

VINIFICATION AND MATURATION Hand-harvest of ripe and complex grapes.

Destemming and crushing followed by cold soak maceration at 8°C for about 24-48 hours.

The maceration takes place in a temperature controlled environment (24-28°C). Aged for 3 months in French oak barriques.

COLOUR Ruby red colour, the aroma is intense and recalls mixed fruits, above all blackcurrant and blueberries. The taste is velvety, soft and recalls various fruit.

NOSE Aroma rich in berries, plums and cherries, with hints of coffee and white cacao.

FLAVOUR Very deep purple red; wide and complex to the nose, with notes of spices, soft fruit and cherry jam. A full-bodied wine, soft and balanced, rich in fine tannins, with a pleasant long lasting finish.

FOOD COMBINATIONS first courses, red meats, game and aged cheese. Interesting in Asian spicy curries.
